You’ve got a better version than Toll House? Thems are fightin’ words

Chocolate chip cookie die-hards can’t help themselves.

Merely hint that you’ve developed a version of the iconic American favorite that’s better than the stalwart Nestle Toll House cookie and heads turn. These hardliners stop in their tracks, demand silence, analyze every ingredient and scrutinize the method. They’ll take to the kitchen and put the recipe to the test, hoping that the original, developed by Ruth Graves Wakefied in the 1930s, will continue to prevail, while secretly ready to join a resounding chorus of praise for the upstart.

In 2018, the equivalent is a recipe that goes viral, a newly minted best-ever chocolate chip cookie that fills Instagram feeds and Pinterest boards. That’s what happened when the die-hards got wind of Alison Roman’s version in “Dining In: Highly Cookable Recipes” (Clarkson Potter, 2017). The cookbook, which debuted last fall, was an instant hit, lauded for its simplicity and exacting flavors.

But it was her Salted Butter and Chocolate Chunk Shortbread recipe that lit up social media and put the former pastry chef’s first cookbook in high demand. As devotees, we made the recipe as directed, but we couldn’t help ourselves; we also baked a batch with cannabutter. The recipe is good for what it is: a shortbread cookie (i.e., no eggs) with a pleasant distribution of chocolate (chopped so that some pieces are larger than others), a crunch of sugar along the edges and a salty top to accentuate the salted butter in the recipe.

But a medicated version of Roman’s cookie pushed it over the top. We used Sour Diesel, probably too fragrant for a cookie, but its citrusy aroma was diminished by using the soaking and decarbing method from Jeff Danzer, who popularized the process for a lighter tasting cannabutter in his cookbook, “The 420 Gourmet: The Elevated Art of Cannabis Cuisine” (HarperCollins, 2016).

Edibles have come a long way, but this infused homemade cookie will make your eyes roll back in their heads way before the THC kicks in.
