This recipe imparts a lemony flavor in the cake and icing. Serve it solo, with strawberries or with strawberry sorbet.
- 1 cup sugar
- Zest of 1 lemon
- ¼ cup plus 3 tablespoons unsalted butter, softened
- 2 tablespoons unsalted cannabutter*
- 2 large eggs
- ½ cup whole milk
- 1 teaspoon lemon oil
- 1½ cups flour
- 1 teaspoon baking powder
- ½ teaspoon fine sea salt
- Glaze, recipe follows
Using your fingertips, rub together sugar and zest to release the citrus oil. Beat sugar into both butters until light and fluffy. Add the eggs, one at a time, and beat mixture until creamy.
Slowly blend in milk and lemon oil. In a separate bowl, combine all the dry ingredients and fold into the butter and egg mixture until combined. Pour batter into a greased 9 x 5-inch loaf pan and bake 55 to 60 minutes in an oven preheated to 350 F until a toothpick inserted in the center comes out clean.
Turn loaf out of the pan. While bread is still hot, poke holes all around with a toothpick, and spoon the glaze evenly over the loaf. Makes 8 servings, each about 11 mg THC based on a 20 percent THC strain.
To make glaze, stir together 3 tablespoons lemon juice and ½ teaspoon lemon oil into 1 cup confectioners’ sugar. *Use the search bar to find the recipe on this site.
