Melissa’s Medicated Lemon Loaf

This recipe imparts a lemony flavor in the cake and icing. Serve it solo, with strawberries or with strawberry sorbet.

  • 1 cup sugar
  • Zest of 1 lemon
  • ¼ cup plus 3 tablespoons unsalted butter, softened
  • 2 tablespoons unsalted cannabutter*
  • 2 large eggs
  • ½ cup whole milk
  • 1 teaspoon lemon oil
  • 1½ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • Glaze, recipe follows

Using your fingertips, rub together sugar and zest to release the citrus oil. Beat sugar into both butters until light and fluffy. Add the eggs, one at a time, and beat mixture until creamy.

Slowly blend in milk and lemon oil. In a separate bowl, combine all the dry ingredients and fold into the butter and egg mixture until combined. Pour batter into a greased 9 x 5-inch loaf pan and bake 55 to 60 minutes in an oven preheated to 350 F until a toothpick inserted in the center comes out clean.

Turn loaf out of the pan. While bread is still hot, poke holes all around with a toothpick, and spoon the glaze evenly over the loaf. Makes 8 servings, each about 11 mg THC based on a 20 percent THC strain.
