Paranoia Prophylactic Pesto

Mendoza decarbs 2 grams of White Widow hybrid cannabis at 240 F for 20 minutes before using it.

  • 2 cups extra-virgin olive oil
  • 2 grams White Widow hybrid flower, decarbed
  • 6 cloves of garlic
  • 1 bunch basil
  • 1 bunch parsley
  • ½ bunch cilantro
  • 4 lemon verbena leaves
  • ½ cup pine nuts
  • 1 lemon, zested and juiced
  • 1 teaspoon coarse sea salt
  • ½ teaspoon black peppercorns, ground
  • ½ teaspoon green peppercorns, ground
  • ¼ teaspoon ground coriander
  • ¾ cup Parmigiano-Reggiano cheese
  • 2 teaspoons honey

Combine flower and oil, and blend for 30 seconds; strain. In a saute pan heated with ¼ cup of the oil, lightly saute garlic; cool. Place herbs, pine nuts, zest, juice, seasonings and garlic with the oil in a food processor, and pulse until combined. Add cheese, and while motor is running, slowly add remaining oil and honey. Toss with cooked pasta or grilled potatoes. Use like unmedicated pesto. Makes 2 cups, about 25 mg THC per 1 ounce serving based on a 20 percent THC strain.
