Dried Fruit Ramen Kugel
- 1½ tablespoons unsalted butter, melted, divided use
- One 3-ounce package ramen noodles, flavor packet reserved for other use
- 1 egg
- ¾ cup cottage cheese
- ⅓ cup sugar
- ¼ cup sour cream
- 1 tablespoon cannabutter,* melted
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¾ cup mixed, chopped dried fruits, such as apricots, cranberries, pineapple, apple, mango, prunes or dates
Heat oven to 375 F. Using ½ tablespoon butter, coat insides of four 1-cup ramekins.
Heat 2 to 3 cups water to boil in medium pan; add noodles. Cook, stirring, just until noodles separate, about 30 seconds. Drain.
In medium bowl, lightly whisk egg. Add cottage cheese, sugar, sour cream, remaining tablespoon butter, cannabutter, cinnamon and nutmeg. Mix lightly then fold in noodles and dried fruits. Divide among ramekins.
Bake until kugel is set and tops are golden, 18 to 22 minutes. Serve warm or chilled. Makes 4 servings, each about 30 mg THC based on a 15% strain.
