Besitos de Nuez (Little Pecan Kisses)

1 cup salted cannabutter, room temperature
2 cups powdered’ sugar, plus more for coating
2 teaspoons vanilla extract
2 cups flour
1 cup pecans, finely chopped
¼ teaspoon kosher salt

With electric mixer, beat cannabutter and powdered sugar until light and fluffy; mix in vanilla and salt. Add flour and nuts and mix until just combined.

Refrigerate until firm.

Heat oven to 350 F. Line cookie sheets with Silpat or parchment paper. Using 2 teaspoons dough, form balls. Place onto baking sheet, leaving about 1 inch between cookies. Bake until cookies just begin to color, 15 to 20 minutes. Cool on sheet for 1 minute; transfer to cooling rack. Let rest 5 minutes then sift thick coat of powdered sugar on top. Makes 60 cookies, each about 9.2 mg THC based on a 15 percent strain.
