Minted Wild Blueberry Fruit Leather

  • 3 cups blueberries*
  • 3 tablespoons CBD-infused maple syrup
  • 2 drops peppermint oil

Preheat oven to 200 F.

In a saucepan, combine blueberries and maple syrup and bring to a boil over medium heat. Reduce heat to low and simmer until blueberry skins begin to split, about 5 minutes.

Add peppermint oil, transfer to a blender and puree until smooth. Spread the blueberry mixture evenly onto a parchment-lined baking sheet and dehydrate in the oven until the mixture is firm to the touch and separating from the parchment paper, about 3 hours.

Remove the fruit leather from the parchment and cool on a rack for 1 hour.

Using a sharp knife or kitchen shears, cut the fruit leather into 15 equal portions. Serve immediately or store at room temperature in an airtight container with parchment between the layers of leather pieces. Makes 5 servings.

*For a peach and plum fruit leather, roast two of each fruit (be sure they are ripe) on a sheet pan in a preheated 325 F oven for 25 minutes. Cool and remove skin from flesh and pit. Add sweetener (see above) and follow the same directions.
