Cranberry Thyme Mimosa
1 cup fresh or frozen cranberries
¼ cup sugar
3 sprigs fresh thyme plus extra for garnish
Cranberry juice, as needed
1 tablespoon CBD honey
1 750 ml bottle cava
In a small saucepan, combine cranberries, sugar and fresh thyme. Add enough cranberry juice to cover and simmer over low heat until the cranberries soften, about 15 minutes.
Remove thyme and push cranberries through a sieve to strain the syrup.
Add 1 ounce of cranberry thyme syrup and 1 teaspoon of honey to a champagne flute. Top with prosecco and garnish with a sprig of fresh thyme. Makes 3 to 4 drinks with leftover syrup.
