Crunchy Ham Slaw with Buttermilk Dressing

½ shallot, chopped
2 tablespoons freshly squeezed lemon juice
3 tablespoons sour cream
2 tablespoons infused olive oil
1 tablespoon Dijon mustard
1 garlic clove, grated
1 cup fresh whole buttermilk
2 tablespoons parsley, chopped
Kosher salt and black pepper 
 to taste
12-ounce package broccoli slaw
1 small jicama, cut into matchsticks
1 small red bell pepper, cored, cut into matchsticks
8 ounces ham, sliced into matchsticks
3 heads butter lettuce
Chives, chopped for garnish
In a blender, combine shallot, lemon juice, sour cream, oil, mustard and garlic and pulse a few times. Add buttermilk, pulse until blended and add parsley and salt and pepper to taste; set aside.
Toss together slaw, jicama, bell pepper and ham with enough dressing to coat the slaw, about 
¼ cup. Season with salt and pepper.
Place a few lettuce leaves on 
four plates and top with slaw. 
Serve with extra dressing on 
the side and garnish with chives. 
Makes 4 servings, each with 
about 2 mg THC based on a 
20 percent strand.
