Green and White Cauliflower Rice

  • ½ head cauliflower
  • 1 head green cauliflower
  • 2 tablespoons olive oil
  • 2 teaspoons chili-infused canna oil
  • ½ small onion, finely chopped
  • Kosher salt and freshly ground black pepper to taste

    Core both cauliflowers and thinly slice the crown to resemble grains of rice. Finely dice remaining parts.

    In a cast-iron skillet, heat oil and saute onion on low to soften. Increase heat to high, add cauliflower and caramelize about 3 minutes; do not stir. Season with salt and pepper. Makes 4 servings, each about 10 mg THC based on a 20 percent THC strain.
