The Wellness Soldier’s Morning Power Muffins
- 2 eggs
- ¼ cup infused olive oil
- 2 teaspoons vanilla
- 1¼ cups all-purpose flour
- ¾ cup coconut sugar or brown sugar
- 1½ tablespoons cinnamon
- 1 tablespoon hemp hearts
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup shredded unsweetened coconut
- 1 cup carrot, peeled and grated
- 1 cup apple, peeled and grated
- ½ cup raisins
- ½ cup roasted pepitas
Heat oven to 350 F. Grease 15 muffin cups or line with cupcake liners.
In a small bowl, whisk together eggs, infused oil and vanilla; set aside. In a medium bowl, whisk together flour, sugar, cinnamon, hemp, baking powder and salt. With large spoon, add coconut, carrot, apple, raisins and pepitas. In several additions, stir in egg mixture, mixing just until ingredients are evenly mixed.
Scoop batter into muffin cups. Bake until wooden pick inserted in center comes out clean, 25 minutes. Cool in pan 10 minutes then carefully remove to cooling rack.
