Vegan Grain-Free No-Bake Samoas

  • 10 dates
  • Pinch of salt
  • 1 cup shredded coconut, toasted
  • 2 tablespoons cannabis coconut oil
  • 1 cup cacao butter
  • 1/2 cup cacao powder
  • 2 tablespoons coconut palm nectar or maple syrup

In a food processor, pulse together dates, salt and 3 tablespoons water. Transfer to a bowl and mix toasted coconut in by hand.

Roll the coconut date mixture into 12 balls and flatten by hand. Place balls on a parchment-lined baking sheet. Use a straw to poke out a center hole. Freeze for 30 minutes or until firm.

In a double boiler over medium-high heat, melt coconut oil, cacao butter and cacao powder. Remove from heat and whisk in the coconut nectar or syrup.

Dip the bottom of the cookies in the melted chocolate and place on the sheet pan. Return to the freezer for 15 minutes, then remove and use a spoon to drizzle melted chocolate on top of the cookies in stripes. Makes 12 cookies, each about 10 mg THC based on a 20 percent strain.
