Richest Potatoes Robuchon
4 pounds Yukon gold or other waxy potatoes of similar size
1¼ pound unsalted butter, cold, cut into cubes
¼ cup cannabutter
1 cup half and half, warmed
Kosher salt to taste
Place unpeeled potatoes in a pot, cover with salted water and bring to a boil. Reduce heat to a rapid simmer and cook until tender, about 20 minutes. Drain, cool slightly and peel. Pass potatoes through a ricer and then a tamis. Return pot and heat through, adding butter in batches. Stir in half and half, season with salt and serve. If you make this in advance, stir in milk when the potatoes are reheated, adding warm half and half as needed. Makes 8 servings, each about 17 mg THC.
